Ingredients
Wings
- 2.2 lbs (1 kg) chicken wings (wingettes and drummettes)
- 2 level tablespoons of baking powder ( NOT baking soda )
- ½ teaspoon table salt
- ½ teaspoon pepper
Buffalo Wings Sauce
- Melted unsalted butter 4 tablespoon
- Half cup Frank’s Original Hot Sauce
- A tablespoon of brown sugar
- Quarter teaspoon salt
Blue Cheese Sauce
- Half cup blue cheese crumbled, softened
- Half cup sour cream
- Quarter cup mayonnaise
- 1 clove small minced garlic
- 2 tablespoon milk
- 2 tablespoon lemon juice
- Half teaspoon salt
- Black pepper a pinch
To Serve
- Carrots
- Beer
- Celery sticks
Directions
1. Start by preheating the oven to 120C/250F and place the rack on a big baking tray.
2. Cut each wing at a place so that you get a mini wing and a drummette. Dry all the wings with paper napkins.
3. Place foil on the baking tray and spray oil on the rack on the baking tray.
4. Put the wings into a big bowl and sprinkle baking powder, black pepper and salt over the wings. Toss it well with your hands to coat the wings evenly. Another important step is to dry the wings before so that they get a lighter coating. Once all is tossed together, discard the remaining coating over the wings.
5. Put the wings on the rack with skin side above. Put it in the oven lower shelf to bake for 30 minutes.
6. After half hour, turn the heat up to 220C/425F and place the tray on a higher shelf for even cooking. Cook for a further 45 min while rotating tray halfway through. You don’t have to turn over the wings. Keep baking until the wings turn lightly golden and crisp.
7. When ready, remove from oven to cool.
Buffalo Wings Sauce
Mix the sauce ingredients together. You can also warm it prior to serving.
Blue Cheese Sauce
Stir together half cup blue cheese and equal amounts of sour cream to form a creamy consistency. Then stir in the remaining ingredients until all mixed. You can add milk to reach a desired consistency. Place it in the refrigerator. Can be taken out of fridge 15 to 20 mins before serving.
Serve the delicious crispy wings with the buffalo sauce, blue cheese sauce, carrots and celery.
