- 1 medium onion chopped
- Garlic cloves 4 minced
- 1 teaspoon smoked paprika
- Cumin 1 teaspoon
- 1/2 teaspoon chilli powder
- Red pepper flakes 1/2 teaspoon
- Vegetable broth 4 cups
- 1 can coconut milk
- To taste, add salt and pepper.
- Olive oil for roasting
Step-by-Step Instructions:
- Set the oven’s temperature to 400 °F (200 °C).
- Scatter some olive oil over the chopped cauliflower florets and spread those on the baking sheet. Add salt and pepper, stir, and season again.
- Bake this cauliflower for around 20 – 25 minutes or till it gets golden brown and tender. Save two or three of the roasted cauliflower florets for garnish.
- Heat up a little olive oil in a pot on medium heat. Cook the onion, minced garlic, and other ingredients until fragrant and tender.
- Stir in the pot with the roasted cauliflower, cumin, smoked paprika, red pepper flakes, and chilli powder.
- Lastly, pour in the veggie broth and bring to a boil. Reduce the heat for 10 to 15 minutes and let it simmer. Use a handheld blender or transfer it to a blender to blend the soup until it is smooth and creamy. Now add milk and mix them until thoroughly combined.
- Add more salt and pepper if needed. Enjoy a hot serving!
